Horizon Organic Mac and Cheese

The beloved childhood favorite gets a little extra nutrition from Milk Plus DHA. A sprinkle of flax meal boosts the omega-3's even more.

Serves 6 to 8

  • 1 lb. elbow macaroni
  • 4 tablespoons Horizon Organic unsalted butter
  • 5 tablespoons flour
  • 1 cup chicken stock or vegetable stock
  • 3 cups reduced fat Horizon Organic Milk Plus DHA
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder teaspoon onion powder
  • 1/2 freshly ground pepper to taste
  • 1 or 2 pinches of cayenne pepper (optional)
  • 3 cups Horizon Organic shredded cheddar
  • 2 medium tomatoes, chopped
  • 1/2 cup bread crumbs
  • 2 tablespoons regular or golden flax meal

*Find flax meal in the natural section of most grocery stores.

  • Preheat oven to 350°
  • Cook macaroni in salted water until softened but still a bit firm. Drain and set aside.
  • While pasta is cooking, melt butter in a 4-quart pot over low heat. Add flour and whisk until all the butter is absorbed into the flour, then cook for 1 additional minute. Add chicken or vegetable stock and whisk until all the flour is dissolved. Whisk in the milk, salt, garlic powder, onion powder, pepper and cayenne.
  • Increase heat to medium and continue to whisk as the mixture begins to thicken and takes on the appearance of a heavy cream sauce. Remove pot from the heat and add 2 cups of cheese, stirring until smooth.
  • Add the cooked pasta to the cheese sauce and combine. Pour the mixture into a buttered 9 x 13 casserole, top with chopped tomatoes, the remaining cup of cheddar cheese and all the breadcrumbs. Place in a 350° oven for 15 minutes. Allow mac and cheese to cool for 5 minutes, then sprinkle flax meal over the top and serve.
