Maple Walnut Granola
Wholesome walnuts and flax meal enhance the Omega-3 content of this satisfying, not-too-sweet granola.
About 6 cups
- 3 cups whole oats
- 2 cups walnuts
- 5 tablespoons brown sugar
- 5 tablespoons maple syrup
- 2 tablespoons Horizon Organic unsalted butter, melted
- 2 tablespoons warm water
- 2 teaspoons vanilla
- 1/2 teaspoon cinnamon (optional)
- 1/4 teaspoon salt
- 1 cup dried cherries or raisins
- 3-4 tablespoons regular or golden flax meal*
*Available in the natural section of most grocery stores.
- Preheat oven to 275°. In a large bowl, combine oats and walnuts. In a small bowl, combine brown sugar, maple syrup, melted butter, warm water, vanilla, cinnamon and salt. Pour syrup mixture over oats and stir until completely combined.
- Divide granola between two cookie sheets and bake for 30 minutes. Remove pans from oven, stir granola to redistribute and bake for 5 - 10 minutes more. The mixture should be dry and crisp.
- Cool for 10 minutes, then sprinkle on the flax meal and stir to distribute. Add the cherries and allow the mixture to cool completely. Store in an airtight container for up to 7 days.
